
Jamaican Mango Jerk Chicken
Clean & season chicken (according to Spur Tree’s instructions). Marinate 4-24 hours (longer time = greater flavour & lower cooking time). Preheat one side of a grill over medium high heat, to approx 400 degrees fahrenheit. Clean grates & lightly grease. Start chicken on the hot side of the grill, turning once, until chicken is nice and brown, with char marks. Move chicken closer to the cooler side of the grill, to cook slowly, until chicken registers an internal temp of approx. 150 degrees fahrenheit. Warm mango chutney until no longer gelled. Glaze chicken once and cook until the internal temp registers 165 degrees fahrenheit. Remove from heat and glaze once more.
